fuel pump problem?

You do have a trouble code 74. This is a cooling fan code. If you are not using the fan wire, turn the fan feature off.
I would suggest you get a fuel pressure gauge. If pump is really loud, it is most likely working too hard. Hopefully your installer used the Fitech Orange wire to go directly to the pump, without a relay. If so, you can use PWM to slow the pump and reduce the noise. Just make sure it maintains pressure. 58psi (400 and Meanstreet 800 are 43psi).
Make sure your grounds are adequate. Here is an example that has never failed me. 2ga from battery to block, 10ga battery to frame, 10ga battery to body.
I see a few things. Don't want to overwhelm you. Your system is doing its job. Getting a little bad information though.
You said your engine was at 190 during datalog, but the Fitech coolant sensor is reading low. There are 2 solutions. Your software has a CTS calibration menu, where you can adjust the system to read the sensor correctly. Or, you can do it the way I do and buy a Delco sensor. Much easier to change sensor and move on. This is a GM sensor used in most vehicles, example 1992 c1500 305tbi.
