IAC Setting

Hello All,
I recently bought a ‘72 Nova with a .60 over 454 (468 c.i) and it has lobey cam (not sure the specs). I am new to owning an EFI system and thus have been trying to do a bit of tuning. I have set the IAC to between 3 and 10, but find that when starting the car the next day the IAC is back up to let’s say 75. Thoughts on why the IAC setting is changing and also what can be done with it? I have a Go EFI 4 - 600 HP system.
