new install. 2 quirks...help please

Hello, new member, been reading for a few weeks. I have a fresh install and have some "quirks"

76 camaro, 327, tremec tkx trans, and 3:73 gears, 600hp fitech (30005) Holley sniper in tank pump.

firstly, car starts and idles great, IAC steps between 4-7. Runs down the hiway beautifully. However, even after running the DFCO enable temp up to 300 it randomly stalls,  especially after coming off the hiway. And I mean hard lean stall and die, re crank, runs fine.

As this is also a new trans and new gears, I've been very gentle on it, yesterday I discovered a strange problem I didn't know it had because I had not wound the engine tight enough to know. At 3500-3700 rpm, it's like it hits a rev limiter. It has an MSD HEI module. I have the tach lead hooked after the factory GM noise filter (capacitor on the firewall). I'm very tempted to put the stock module back in to see if it changes anything. (and yes the fitech rev limiters are set at 7k in both places I see them)

No, I don't know how much fuel pressure it has. And I haven't done a data log yet. I've only got 240 or so miles on the gears/tranny. I want to get them broken in good before I get crazy.

Anyone got any thoughts?
