Starts well. Suddenly dies and will not run over 2500rpm.

My car #1 (Lister)400hp fitech on 350 ZZ3 crate. Has run in the past. Starts well, but dies unless held at 2500 rpm. Starting fluid in throat and then runs ok as long as keeping starting fluid. Idles ok. Stop adding fluid. Dies. No codes thrown. Seriously suddenly stumbles when driving, but catches up and stumbles again.
Ideas?
